ingredients:
    1 large Cauliflower
    4 tbsp of cornflower
    4 tbsp plain flour
    3 tbsp sweet chilli
    2 diced tomatoes
    1 Japaleno Pepper
    1 lime
    1 diced white onion
    5 cloves of garlic
    1 tsp cumin
    2 smoked paprika
    1 tsp salt
    2 tsp sugar
    5 tbsp of Peri Peri Hot sauce
    6 tbsp soy sauce
    2 tbsp rice vinegar
    1 tablespoon of nutritional yeast
    whisk gently until you get a smooth batter.
    cup of breadcrumbs
    200 ml of unsweetened soy milk
    1 cup of vegan mayo

Method:

1. Chop a large cauliflower into nice bite size pieces and place onto a lightly oiled oven tray and place into an oven on a high heat (200 deg c).

2. Add all of the dry ingredients into a large bowl and mix well.

3. Add the soy milk, 2 tbsp of the MAHI Peri Peri hot sauce and the rest of the wet ingredients to the mix until you get a nice smooth, thick batter - if the batter is too runny add more flour.

4. After around 20 mins take out the Cauliflower pieces and dip them in the batter, place them on a drip tray.

5. Once they are no longer dripping cover the Cauliflower bites in breadcrumbs and place back in the oven for another 20 mins.

6. Whilst waiting for these to cook, use this time to add 3 tablespoons of MAHI sauce to 1 cup of vegan mayo and you have a tasty peri peri mayo dipping sauce ready for serving.

7. Once the Cauliflower has started to brown take them out and serve with the side of peri peri mayo (use MAHInaise or vegan mayo/hot sauce mix).

8. Serve as a starter or as part of main meal. Delicious!
