ingredients:
    500g wings (tips removed)
    500ml buttermilk
    50ml mahi peri garlic marinade
    4 cloves of garlic minced
    3 sprigs of rosemary
    pinch of salt and pepper
    Crumb:
    300g plain flour
    50g semolina flour
    15g fresh rosemary
    Chopped fine
    60g porridge oats
    10g salt
    4 nachos
    1tsp paprika
    1tsp cayenne pepper
    1tsp cracked black pepper

Method:
  1. Place all the ingredients into a mixing bowl and mix well, then add the wings. For the best result marinade in the fridge overnight, but you can marinade for 4 hours.
  2. Place all ingredients into a food processor and pulse (don't blitz as you want that crunch from the oats and nachos) then place this into a mixing bowl.
  3. . You can either shallow fry these and place them in oven or you can deep fry them. To deep fry just preheat the fryer to 150 degrees, once this has reached temp grab the chicken wings out of the fridge. place 1 wing at a time into the flour mix then place in the fryer basket (or on a tray if shallow frying). once all the wings are coated in the flour mix drop them in the fryer and leave them for 10 minutes. Once they're done lift from the fryer and let them rest for 2 minutes.
  4. Once the wings have rested place in a mixing bowl and add your desired mahi sauce (we went with the peri peri garlic one), shake the bowl to coat all the wings. Once the wings are coated they're ready to be plated.
