    4 eggs (2 for yolk only)
    2 tbsp olive oil
    2 tbsp french mustard
    1 large potato
    1 plum tomato
    freshly chopped chives
    3 tbsp MAHI Cayenne & Cranberry Sweet Heat Sauce (or MAHI Green Savina Habanero Sweet Heat Sauce)

  1. Prepare your hollandaise sauce with 2 egg yolks, mustard and olive oil into a small bowl
  2. Whisk together with a little hot water (careful not to scramble your eggs!)
  3. Parboil your potato,then grate finely and add salt and pepper to taste
  4. Mould into small cylinders and fry in oil on a medium heat on both sides till golden brown
  5. When ready, place your hash brown onto a plate to cool
  6. Poach your eggs and grill two halves of a tomato
  7. Add tomato and poached egg onto hash brown and drizzle your hollandaise over the top
  8. Finish with a healthy dollop of mahi sauce, serve and enjoy!
