With its mixture of cayenne pepper, hot sauce, red chilies, ginger, brown sugar and soy sauce, Szechuan tofu has a savoury hot and spicy flavour with a touch of sweetness. This dish serves 4 and is ready in just 30 mins.

    1 block of tofu
    cup of soy sauce
    2 tbsp ginger paste
    1/3 tsp sesame oil
    Pinch of salt
    1 cup of water
    2 tbsp of cornstarch
    6 tbsp of brown sugar
    3 tbsp rice vinegar
    1 tbsp apple cider vinegar
    1 tbsp of ketchup
    1tsp hot sauce

1. Start by draining the water from the tofu and dice into good size chunks, big enough to fit onto a skewer without breaking

2. Then add the cornstarch into a large bowl and add the tofu pieces until they are fully coated then set them to one side

3. Whisk the rest of the ingredients together in s large bowl and then transfer into a small pan. Turn the heat to medium and stir constantly until the sauce thickens (for approx 5 to 10 mins)

4. Whilst you wait for the sauce to cook add the tofu pieces to a frying pan and cook until the outside has gone lightly crispy

5. Once the sauce has thickened place in a small bowl and set aside for a moment

6. Add the tofu pieces onto the skewers then generously drizzle in the Szechuan sauce and it’s ready eat.
